i finally ordered a spiralizer and spent a good part of the week saving every zoodle recipe i could find to pinterest. for my first attempt i chose a thai chicken with spicey peanut sauce from the blog joyful healthy eats. i also tried out a new market near me that is, shockingly, open on sundays. all the produce for this meal was purchased here. the chicken was from the grocery store, i haven't been brave enough to try the meats stands. maybe this weekend.

lehel is larger than szimpla and belvarosi (maybe i'll do a big round up), like szimpla it is open on sundays. my initial reason for trying it out was b/c i heard they had kale. but it's apparently out of season now so, i struck out. on to the good stuff, the food.
due to the fact that i work 12 - 13 hours a day, my cooking during the week is limited. i end up eating a lot of pasta. i figured if that was going to be my week night fall back, why not try to make it healthier. enter the spiralizer...

i ordered the hemsley + hemsley spiralizer from amazon.uk. i chose it because it was inexpensive and has a life time warranty. it's worked beautifully, i love that the feet suction to the stove top.
i'll let you click on over to the recipe and just give you the pretty(ish) pictures. you may notice i left out the cilantro (couldn't find), bean sprouts (personal choice) and green onions (personal choice). i also used tamari sauce as it's what i had on hand. on to the fixing!

this was very tasty, even cold the next 2 days for lunch.
i used organic peanut butter which is a bear to stir on a normal day but when you're trying to make a thin sauce, forget it. i used the nutribullet and let is sit for a bit. once the mixture got to room temperature, it was easier to stir in.
