chunky monkey protein bars

i have a theory that there's no situation in life that cannot be improved by the presence of a monkey. so when this recipe showed up in my feed, i had to try it. didn't hurt that it's flavor was compared to ben & jerry's, my favorite ice cream makers. gods actually.

super simple

1 ripe banana
12 medjool dates, pitted
1 cup raw walnuts
1 cup quinoa flakes
1/2 cup chia seeds
1/4 cup milled flaxseed
1/4 cup cacao nibs
1 tbsp. virgin coconut oil
1 tsp. pure vanilla extract

i love my little cups

measure out all the ingredients, except the cacao nibs, and dump them in a food processor. mix until blended, becomes sticky pebbles. dump into a larger bowl and mix in the nibs.

grease an 8x8 inch baking dish and press even.

best spatula ever

bake at 350 for (give or take) 30 minutes.

smells so good

let cool completely before turning out and cutting into squares.

comes out hard like a granola bar

i was making a delicious treat for a co-workers b-day at the same time, so i may have let these cool a bit too long before cutting. it was a tad crumbly, but still tasty and a great snack for my 3pm munchies.
