1 cup uncooked quinoa
1.5 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
2 apples, peeled & diced
1/4 cup rasins (nope)
2eggs
2cups vanilla soy milk (i used reg milk)
1/4 cup maple syrup
1/3 cup almonds, chopped
preheat oven to 350 degrees and lightly grease 7x11 (i used 8x8) baking dish. in a small bowl, mix uncooked quinoa with spices, pour into baking dish.

i have this amazing apple peeler/core/slicer from williams sonoma. if you don't have one, i suggest you get it. it's quick and easy, great for salads.

in same small bowl, beat the eggs. whisk in milk and maple syrup.
i beat and whisk together |
pour egg mixture over the fruit and quinoa. lightly stir to submerge the fruit. sprinkle with almonds.
you may have noticed i didn't add raisins. i'm not a fan, i've been known to call them evil. i will tolerate them in cereal if i have to, but that's where i draw the line.
bake for about an hour or until it's mostly set. i let mine go an hour, it could prob have stood another 5-10 min without getting to dry.
let cool and then cover before placing in the fridge. just cut yourself a slice in the morning. i usually get 6 servings out of the 8x8 when used as a breakfast bar. 9 when i cut into smaller bars like the monkey bars and protein bars i'll post later.
i reheated for 1 minute and it was perfect. the popsugar link also suggests adding yogurt, but i don't think it needed it. maybe some vanilla ice cream tho, mmmm.
