protein pancakes

nearly every fitness/health food blog i read has a recipe for protein pancakes. also a trend, these bloggers seem to have enough time to make one fresh every morning. sadly, i do not have that luxury. whether la traffic, work sched or inability to wake before 6:50, there's no way i'm getting showered, dressed and fed before i head to work.

then last weekend as i preheated my oven to warm up my trader joe's blueberry waffles i thought, i wonder if the protein pancakes would reheat? guess what, they do!

1.5 cups old fashioned oats
1/2 cup fat free cottage cheese
1/2 scoop vanilla protein powder
1 very ripe banana, mashed
1/4 cup milk
1/4 teaspoon vanilla extract
1 egg

the best part of this, other than the eating, was getting to use my immersion blender again. dump everything into a bowl and blend. do use a bowl, not the cup that came with the blender, it's just a bit too small to dump everything in at once. i ended up adding oats a little at a time.

heat non-stick pan over med-low (i was closer to med than low). pour in batter and let cook for 2 minutes, then flip.



this will make 6 med sized pancakes. i let the first 4 cool on a cookie sheet before layering between wax paper and putting in the freezer in a rubbermaid.


the other 2? duh, i ate them!

sooo good!

my apt smelled awesome after making these. for the frozen pancakes, i brought them to work, reheated 1 pancake for 1 minute and added a side of blueberries to the plate.
