chicken quinoa broccoli casserole

yeah, i know, there's been a lot of quinoa lately. i found a bag in the back of the pantry and i just had to use it. years ago southern living posted a recipe for "invent your own casserole." you basically picked a pasta, meat, frozen veggie, can of soup and added them to milk, water and sour cream. perfect casserole every time. this is the same principal, save the sour cream and canned soup.





2 cups reduced sodium chicken broth
1 cup milk
1 tsp poultry seasoning
1/2 cup flour
2 cups water, divided
1 cup uncooked quinoa
1 lbs boneless, skinless chicken breasts
2 tsp cajun seasoning
1/4 cup shredded gruyere cheese
3 cups fresh broccoli florets

bring broth and milk to a boil

mix flour and seasoning

add flour mix to broth/milk, to boil

slice chicken into 1/2 inch strips, i don't think that step warrants an image, slimy!

add broth/milk mix to quinoa

pour into well greased 9x13 pan

add chicken

top with some seasoning

bake uncovered 30 minutes

3 cups of broccoli in boilng water for 1 minute/bright green

rinse with cold water

remove dish from oven

add broccoli and cheese, bake another 10-15 minutes

turned out pretty good, needed more cheese, as always. it wasn't terribly creamy, i may have left it in the oven a few minutes too long. the quinoa is still a very powerful taste, i'd add more seasoning next time.

note about hello kitty: usually i cook in a super hero shirt b/c, well, they're awesome. i chose hello kitty after reading 2 heart wrenching stories of grade school boys in my home state of north carolina being bullied because they like my little ponies. michael went so far as to hang himself when the bullying didn't stop. grayson's mother was told by the principal that the child brought it on himself for bringing the rainbow dash (a tomboy pony) backpack and lunch box to school, and to please get him something else. that a school would side with child bullies, enrages me.

as a girl child i had spotty dotty and ninja turtles lunch boxes. one christmas i got she-ras castle and voltron. i spent several halloweens dressed as a redskins football palyer, i was never bullied. as a grown woman, i have 20+ superhero/sci-fi shirts i wear in public on the regular, and more on my "to buy" list. my living room is decorated with super hero art, video games, a lego de lorean and millenium falcon. heck, i have hulk fists under my desk right now just in case. i also have hello kitty pj's, fluffy unicorn pillow pet and more beauty products than my dressing table can hold. it's a terrible double standard that girls can like "boy" things while boys can't like "girl" things. that there is a line between the two is just stupid.
